Why blast freeze frozen yoghurt?

Blast chilling

Brings cooked bases, sauces and fillings from +90 °C to +3 °C in 90 minutes – passing quickly through the temperature range where bacteria multiply.

Blast freezing

Takes product from +90 °C to -18 °C in 240 minutes with -40 °C air. Fast freezing forms small ice crystals, keeping frozen yoghurt smooth and desserts sharp-edged.

FAQ

Blast freezer questions

Is a blast freezer different from a normal freezer?

Yes. A storage freezer holds product that is already frozen. A blast freezer removes heat very quickly, so products freeze with smaller ice crystals and better texture.

What tray sizes fit?

The Techfrost Entry line takes GN 1/1 gastronorm and EN 600×400 pastry trays, from 3 trays (JOF ONE 3) to 10 trays (E10).

Do I need three-phase power?

The JOF ONE 3 and E5 run on 230 V single phase with a standard 10 A plug. The E10 needs 400 V three phase.

How long does hardening take?

A few minutes for frozen yoghurt in Silikomart stick moulds; full blast-freezing cycles run to 240 minutes depending on the load.
